Banana Bread

I had a couple of bananas sitting around attracting fruit flies, which I didn't want around. So I thought that I should get rid of the bananas so the flies would go away. At first I was just going to toss them in the worm bins, but I thought that was not a good use, so I made banana bread instead. It was great, so I thought I'd share the simple recipe.

3/4 Cup Sugar
1/2 cup margarine
2 eggs
2 over ripe bananas, mashed
1/2 cup milk
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
a handful of chopped nuts

Preheat oven to 350 F. Cream sugar with margarine. Beat in eggs, bananas, milk and vanilla. In another bowl, combine remaining ingredients. Add dry mixture to wet mixture and combine. Pour into greased loaf pan. Bake for about an hour, or until toothpick comes back clean. Cool 5 minutes, remove from pan. Completely cool on cooling rack before wrapping and refrigerating.
